VITAMIN E

Olive oil is an important source of vitamin E, whose main physiological activity is its antioxidant action, preventing chain reactions caused by free radicals.

Vitamin E is deposited abundantly on plasma membranes, supporting the maintenance of cell integrity and stability. It is able to regulate the expression of certain genes, although the mechanisms are still not entirely clear.

An additional function of vitamin E is the modulation of the immune system through different pathways.
