Do you know what does oil acidity mean? Unlike what many people think, it has nothing to do with the meaning of the word "acid" itself, but with the amount of free fatty acids.
And that acidity is used to measure the quality of olive oils! Why does it happen?
Because acidity can be influenced by some factors, such as olive quality, purity, ripeness, storage and transport, and is associated with the level of degradation and oxidation of the oil.
Considering this, an oil with greater acidity presents greater oxidation and this is where we need to pay attention. That is because some oil oxidation products are harmful to health!
Beware! The acidity of good quality olive oil is not greater than 2%, which is the case of our Andorinha oils!
