The process begins by mechanically harvesting the olives for better yield and to protect the olive trees. Then, they are transported and go to the mill, which takes 4 to 6 hours and preserves the quality of the olives.
In the mill, the olives are carefully processed and sanitized before the oil is extracted. At the mill, they are crushed to a paste. Then, the paste is beaten in a thermo-mixer to separate and produce the oil.
