Did you know that olive oil is the pure juice of olives and nothing else?
From planting to packaging, oil production involves several steps to guarantee the highest quality Andorinha oil.
Each stage of production requires a lot of discretion and caution, with advanced technology and wide farming experience.
The steps involved are:
1. Planting: Olives are selected according to the organoleptic properties (such as color, brightness, light, odor, texture, color and flavor) that olives impart to olive oil;
- Once selected, the olive trees are planted such that they can be best exposed to the sun, which helps olives grow better;
- For irrigation, Andorinha uses the drop-by-drop system, which ensures that the water is used in the right amount needed, avoiding waste;
- Rainwater is treated and used as fertilizer.
2. Our olives are mechanically harvested for higher yield while not harming the olive trees.
- In this process, the olive tree leaves are reused and sent to the soil fertilization.
3. The harvested olives are sent to the mill, where oil is produced.
- One of Andorinha's greatest distinguishing features is the speed with which the olives are harvested and transported, preserving their quality.
4. In the mill, the olives are selected and cleaned, and undergo a grinding and centrifugation process, becoming olive oil.
- The olives are crushed to a paste, which is separated into solids (bagasse) and liquids (olive oil and vegetation water);
- Finally, the oil is separated from the water.
5. Analysis: The oils are subjected to extensive analysis, sensory tests and acidity degree tests to classify them according to their sensory profile and check their quality.
- Olive oil is tasted to evaluate its profile and organoleptic qualities;
- Finally, oils are combined to ensure the desired flavor and aroma profile of each product;
6. Packing: The oil is bottled, labeled and shipped to the points of sale.
Once this is done, the oil is ready to reach your home.
It is worth noting that the entire production process is subject to external audits, which certify our sustainable agricultural system, guaranteeing the preservation of natural resources.
