Ingredients
200 g cherry tomatoes
1 leek (only the lightest part)
1 large red onion
180 ml Andorinha Extra Virgin Olive Oil
60 ml lime juice
Salt
Black pepper
METHOD
1- Chop all ingredients.
Set aside.
2- Beat the oil, lime, salt and pepper with a fork or fouet until you get a smooth sauce, incorporating the oil with the lime.
3- Add the chopped vegetables to this sauce.
Perfect to go with fish.
